Samoa Girl Scout Cookies

This used to be my favorite time of year. Yesterday the girl scouts came by selling cookies, and my mom ordered a box of... everything.

It was a total bummer thinking about how I don't get to eat Samoas, frozen Thin Mints, and Tagalongs. I decided this year I'm not going to watch everyone else enjoy them. Time for copycat recipes.

I found the recipe here, and just substituted GF flour mix for the flour.

I recommend refrigerating the dough overnight, because these spread like crazy. Also, I got a little rolling-pin happy and rolled them too thin. Make sure they have some thickness or it won't hold up to the caramel/ coconut topping. I also forgot to dip the bottoms in chocolate. Oops.

I actually don't remember how the real things taste, but the recipe is really good.

Those look good, but here, our girl guide cookies don't come in that kind. We just have the mint cookies in the winter and the sandwich cookies in the summer (1/2 a box of vanilla and 1/2 chocolate). I like the idea of this type though =D.

Thats the best thing, you forget what wheat products taste like and then can full enjoy the gluten free ones!

My husband isn't a big fan of coconut but if it is balanced right he enjoys it. I love samoas so I just might have to make these for him.

I just found your blog and love it!!! I was wondering, did you add any xanthan gum to the cookie part? What flour mix do you use?

I mix up a slightly different mix of flours every time, and I do add xanthan gum to that mix so I don't have to add it separately to each recipe.
